• 3 eggs
  • 75g sugar
  • 250ml milk
  • 200ml cream
  • 2 shots brandy
  • 2 shots Dragon’s Keeper gin
  • ½ tsp vanilla essence
  • ½ tsp cinnamon powder
  • Star anise botanical garnish



  • Separate egg yolks from egg whites.
  • Mix yolks with 50g sugar, milk, cream, brandy, gin, vanilla & cinnamon, and whisk well.
  • Chill for half-hour.
  • Mix egg whites separately with 25g sugar & beat until foamy & soft.
  • Add white mix to chilled yolk mix, gently stirring until well mixed.
  • Pour in a small cocktail glass, garnish and serve.
